【摘要】:ThisInternationalStandardspecifiesamethodusingHPSECtodeterminethecontentsofpolymerizedtriglyceridesinoilsandfatswhichcontainatleast3%(frompeakareas)ofthesepolymers.Thismethodisapplicabletofryingfats,andfatsandoilsthathavebeenthermallytreated.Itcanalsobeappliedtothedeterminationofpolymersinfatsforanimalfeedstuffs.NOTE1Polymerizedtriglycerides(strictlyspeakingdimericandoligomerictriglycerides)areformedduringtheheatingoffatsandoils,thusthemethodservestoassessthethermaldeteriorationoffryingfatswithuse.NOTE2Inthecaseofanalysisoffatsfromanimalfeedingstuffs,theextractionmethodusedcanhaveaninfluenceontheresult(seeISO6492).
