【摘要】:Thisstandardspecifiessafetyandhygienerequirementsforthedesignandmanufactureofdoughmixerswithrotatingbowlsofcapacitygreaterthanorequalto5l1)andlessthanorequalto500l.Thesedoughmixersareusedtoprocessvariousingredientse.g.flour,sugar,fat,salt,waterandotheringredientsinfoodmanufacturersandshops.Thesemachinesaresometimesusedinotherindustries(e.g.pharmaceuticalindustry,chemicalindustry,printing),buthazardsrelatedtotheseusesarenotconsideredinthisstandard.Thefollowingmachinesareexcluded:?planetarymixers(EN454);?continuouslyfedmachines;?mixerswithstationaryverticalbowls;?experimentalandtestingmachinesunderdevelopmentbythemanufacturer;?domesticappliances;?automaticloadingandunloadingdevices.Theintendeduseofthemachine,asdefinedin3.12ofEN292-1:1991andasgiveninthemanufacturer’sinstructionhandbook,istheloadingofvariousingredients,processingthembymeansofakneadingtool,unloadingandcleaning.Theoperationisusuallycarriedoutincyclesofvariableduration.Manualoperationsaresometimesnecessarytotakesamples,toscrapethebowloraddingredients.Thesignificanthazardscoveredbythestandardaremechanical(crushing,shearing,trapping,impactandlossofstability),electrical,ergonomicandalsothoseresultingfromnoise,inhalationofflourdustandlackofhygiene.
